Vanilla is warm, balsamic, sweet, dense, resinous, powdery, vanillic dry down.
HOW IT WORKS?
Vanilla beans contain vanillin which provides the softness and warmth leaving you feeling calm and collected.
HOW IS IT EXTRACTED?
Vanilla flowers are pollinated by insects and hummingbirds, but on plantations it is done manually. Young green pods hang on branches for 8-9 months and after harvesting they are being dried for another 6 months. Due to the long labour-intensive process, vanilla is the second-most expensive spice after saffron.
During the drying process they produce white crystals called vanillin. Vanillin in Vanilla beans is soluble in water; hence its aroma is not extracted via steam distillation, therefore there is no such thing as vanilla essential oil. Vanilla absolute is instead extracted via solvent extraction.
